Zucchini Wheat Germ Muffins

ZUCCHINI WHEAT GERM MUFFINS

Mix in a large bowl:

2 cups whole wheat pastry flour
1 cup shredded zucchini
3/4 cup wheat germ
1/2 cup (or less) sugar (brown sugar is good, too)
1 tablespoon baking powder

Combine and mix into the flour mixture only until blended.

3/4 cup milk
1/4 cup oil
1 egg, beaten

Spoon into 12 greased muffin cups.  Bake at 375 degrees for 20-25 minutes.
